Storing your chocolates or unused coatings

Coatings (Mercken's chocolate) will keep up to six months when stored in a cool, dry place. Temperatures between 55 degrees – 75 degrees are best. They store well in the plastic bags in which they are purchased. Or you can wrap them in foil and store them in the freezer. Just be sure they are not stored with spicy items, as they will pick up the smell.
Finished items can be stored 2-3 months at room temperature stored in the own candy boxes or cello bags (poly bags do not store as well.). Don't store peppermint items with plain items they can pick up the peppermint taste.
